Raisin and Coconut overnight oats

Another overnight oats recipe from my experiments a while ago.  The honey and the raisins lend a nice hint of sweetness to this one without being too sweet.  The cashews keep a nice bite as well.  I added pear chunks to this one before eating and it was delicious!  The pears and the ginger make a really nice combination.

4 tbsp oats
1 tsp ginger
2 tbsp coconut chips
2 tbsp raisins
2 tbsp cashew nuts
1/8 tsp salt
1 tsp honey
3/4 cup coconut milk

Mix all of the ingredients together in a bowl and place in the fridge overnight.  In the morning, add any fruit and yoghurt of choice and eat!  I like to get mine out of the fridge about half an hour before I eat it so that it comes up to room temperature but it is equally good straight out of the fridge.
