Jewel Biscuits

I was on the baking roster for Good Bitches Baking last week.  This was my first bake of the year and I decided to adapt my chocolate chip recipe using sunflower seeds and cranberries.  The name came about as the cranberries looked like little rubies embedded in the biscuits.  They also tasted really good!

  • 190g butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 3 cups flour
  • 3 tsp baking powder
  • 1 cup sunflower seeds
  • 1/2 cup dried cranberries (or could use sultanas)
  • 1 tsp salt

Cream the butter and sugar together until light and fluffy.  Add eggs one at a time, beating well after each addition.  Sift flour, baking powder and salt together and add to butter mix half at a time.  Add in the sunflower seeds and cranberries and mix until combined. 

Roll into balls and place onto an oven tray.  Press flat with fork and bake at 180 degrees celcius for 15 mins or until golden.  Place on rack to cool and store in airtight container.  Will keep for up to a week if they last that long!
