Milo Coconut Biscuits

I am on the baking roster again this week so made another variant of my chocolate chip biscuit recipe.  These ones are really good.

  • 190g butter
  • 1 1/2 cups brown sugar
  • 1 tsp salt
  • 2 eggs
  • 2 1/2 cups flour
  • 3 tsp baking powder
  • 1/2 cup milo (or some other drinking chocolate powder if you don’t have milo)
  • 1/2 tsp cinnamon
  • 1 cup dessicated coconut

Cream the butter and brown sugar.  Add eggs one at time beating well after each addition.  Add salt and mix well.  Sift together flour, baking powder, milo and cinnamon.  Mix coconut into flour mix and add to the butter mix half at a time.  Mix well until dough is pulling away from the sides of the bowl and isn’t too sticky.  You may need to add a bit more flour.

Roll into balls and place onto oven tray.  Press flat with a fork and bake at 180 degrees celcius for 15 mins or until golden.

Let cool slightly on tray then transfer to wire rack until completely cool.  Store in an airtight container for up to 5 days (if they last that long).  Makes 40.
