Cornflake crunch biscuits
Here’s a bit of nostalgia baking for you, just like my mum used to make. I brought a bag of cornflakes to make some Afghan biscuits for a work morning tea and decided to whip up a batch of these to use up some of the remaining cornflakes.
125g butter
3⁄4 cup sugar
1⁄2 cup coconut
1 egg
1 1/2 tsp baking powder
1 tsp vanilla essence
1 1⁄2 cups Flour
1⁄4 tsp Baking Soda
1 cup cornflakes
Cream butter and sugar until light and fluffy. Add egg and vanilla
essence and beat well. Sift flour, baking soda and baking powder together and add to creamed butter mix. Add cornflakes and coconut and mix together. Roll into balls and flatten with a fork. Bake at 180 C for 15 mins or until golden. Cool on rack and store in airtight container for up to 3 days (if they last that long!)
