Leftover fruit
Saturday morning is my weekly visit to the local vege market and the fruit bowl is normally empty by Friday. Unusually for us, we had some fruit leftover on Saturday morning so I put it to one side and filled up the bowl with the fresh stuff. It was all a bit past it’s best but I didn’t want to waste it.
I had one apple, three nectarines, one peach, two plums and seven greengage plums.

I cored and chopped the apple, peeled the peach and removed the pip, removed the pips from the nectarines and plums and chopped everything small and added it to a pot with a tiny bit of water and set it over a high heat. Once it had come to the boil, I left the lid off and let it simmer until the fruit was nice and soft and had mashed nicely together. I added a teaspoon of ginger and stirred that through then put into a hot sterilised jar and put the lid on and left to cool on the bench.

The resulting goodness was enough to fill a jar. It will stay in the fridge and get added to smoothies, cereal, yoghurt, all the things. Great way to save fruit from going into the bin!
