We are currently experiencing a zucchini glut in our garden and in desperation I turned to Google for some ideas to use them up.
I had already made this cake (it was delicious by the way and I recommend making it) to take to work for a welcome morning tea for 2 new staff members, and taken a whole bunch to work to give away, and I still had about 10 to use up.
I found this recipe for bread and butter zucchini pickles which I made this evening. I love bread and butter pickles and it is the only way I will eat cucumber so loved the idea of making some with zucchini.
I pulled some recycled jars out of my stash and got to work.
I hope they taste as good as they look. Now off to find another recipe to use up the last 3, 2 of which should technically be called marrows……………
