Lemon Cookies

I have an abundance of lemons at the moment so had a play round with my Chocolate Chip cookie recipe and came up with these deliciously crunchy lemon cookies.  They spread quite a bit so make sure you don’t overload the tray.

190g butter
1 1/2 cups sugar
2 eggs
1 tbsp lemon juice
zest of 1 lemon
1/4 cup of custard powder
2 1/2 cups flour
2 1/2 tsp baking powder

Cream butter and sugar until light and fluffy.  Add eggs one at a time,  beating well after each addition.  Add lemon zest and juice and mix until just combined.  Sift flour, baking powder and custard powder together and add to the wet ingredients a bit at a time, mixing well.  If the mixture is a bit sticky, add more flour.

Roll into balls and place onto oven tray.  Press flat with a fork and bake at 180°C for 15 minutes or until golden.  Cool slightly on tray then remove to a cooling rack to cool completely.  Store in an airtight container.  Makes 40.
