Easy peasy soup

It’s cold and raining here today so I whipped up this delicious soup for lunch.  It was so easy and cheap,  I thought I would share.  You can make it vege by leaving out the bacon

Put a pot on the stove top to heat up and add either butter or oil (if you want it vegan).  Chop a small onion and add to the pot along with some garlic.  Cook for 5 or so minutes.  Add 1 cup frozen peas and 1 cup other frozen veg (mine had broccoli, cauliflower, green beans and carrot) to your pot and stir together with the onions and garlic.  Add 2 cups vege stock and bring to the boil then simmer for 15 minutes or until your veges are all soft and melty.  

Remove from the heat and allow to cool slightly for 5 mins or so then whaz it all together with a stick blender and return to a very low heat to stay warm while you cook your bacon.  I had some bacon bits that I fried and added to the bowl once I had dished up the soup but you could use chopped up rashers or just leave it out to make this vege/vegan.  Add some yummy toast on the side and you are done.  It was so good and there is some left over for lunch tomorrow. 

Will comfortably serve 3 people.
