Ginger Biscuits
Gosh it has been a while since I dropped in for a chat. I have been busy studying and had my exam today, so to celebrate, I made some of these cookies when I got home. I found the recipe the other day when I was looking for something else. It was given to me by my mother in law. Her mum (Granny Lee) had a bakery in Christchurch back in the day and this recipe was one of hers.
They are so delicious, crisp on the outside and chewy on the inside and I just had to post the recipe for you as they would make brilliant Christmas gifts. This is the first time I have made them so I made them to the recipe but I am keen to experiment and play around with this one and see what other flavour combinations I can come up with.

1 cup golden syrup (I used a combo of honey and golden syrup)
1 cup sugar
1 cup butter
4 cups flour
1 tsp baking soda
1 tbsp ground ginger
1/2 tsp salt
Preheat the oven to 180ºC. Heat the butter, golden syrup and sugar together in a pan over a medium heat until the butter has melted. Sift the flour, salt, ginger and baking soda together into a large bowl. Add the wet ingredients and mix together with a wooden spoon until combined. Roll teaspoons of mixture into balls and place onto an oven tray. Bake in the oven for 10 mins. They will spread so there is no need to press them flat. Place onto a rack to cool and try not to eat all of them at once (I had three!)
