Peanut Butter flavours experiment

This experiment came about from a conversation we had over lunch at work one day.  I have made my own peanut butter for a while now (recipe here) and was inspired to try some different flavours.  I took them to work for a taste test and they were all well received but the one that got the most votes was surprisingly the Chinese 5 spice.  The general consensus was that it would be nice on some steamed Bok Choy.

Now for your tasting pleasure, the recipes:

Gingerbread
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground allspice
½ tsp ground cloves
Pinch of black pepper
200g raw peanuts
Olive oil
Salt to taste (optional)

Roast the peanuts and leave to cool.  Place in food processor and blitz until resembles peanut butter.  Add some olive oil if it is a bit dry.  Add all of the spices and blitz until mixed.  Add a bit of salt to taste if desired.  Pour into hot sterilised jar and put lid on straight away.  When cool, store in fridge.


Tikka Masala
1 tsp ground coriander
1 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
1 tsp garam masala
½  tsp ground ginger
½  tsp dried mint flakes
¼ tsp chilli powder or cayenne pepper
300g raw peanuts
Olive oil
Salt to taste (optional)

Chinese Five Spice

1 tsp ground Szechuan pepper
1 tsp ground fennel seeds
1 tsp ground cloves
300g raw peanuts
Olive oil
Salt to taste (optional)

Roast the peanuts and leave to cool.  Place in food processor and blitz until resembles peanut butter.  Add some olive oil if it is a bit dry.  Add all of the spices and blitz until mixed.  Add a bit of salt to taste if desired.  Pour into hot sterilised jar and put lid on straight away.  When cool, store in fridge.
