Viral Japanese Cheesecake!
I am not normally one to follow or try out food trends that go viral on the internet but just recently this Japanese Cheesecake trend caught my eye. Given my love of all things Japanese and the 2 ingredients required, I had to give it a go. All I had to buy was a packet of biscuits as i already had yoghurt in the fridge. Most of the versions I have seen say to use Biscoff biscuits but I decided to use a NZ favourite, the good old Gingernut.
All you need to make this is greek yoghurt and a biscuit of some description and a vessel to make it in.

I put 6 tablespoons of yoghurt into the bottom of the glass then rammed in as many gingernuts as would fit. The yoghurt rose up to fill the glass as I did this.


I then put a thin layer of yoghurt over the biscuits and popped the glasses into the fridge overnight. The result was so good and actually tasted like cheesecake. This is one viral trend I am definitely getting on board with and will be making this again.
