Loaded Corn Fritters

Corn fritters are quick and easy to make and you can eat them as is or jazz them up for a delicious dinner.  This recipe is an adaptation of one that I have had for years, so long in fact that I can’t remember where I got it from.

1 x 410g creamed sweetcorn with no added sugar
1/4 cup of chilli sauce
2 eggs
1 tsp baking powder
1/2 cup flour
1 tsp paprika
3 spring onions chopped
1/2 cup grated cheese
salt and pepper to taste
oil for cooking

In a large bowl, mix together all the ingredients and set aside for 5 mins to rest.

Heat the oil in the pan and add tablespoons of the mixture to form your fritters.  Cook until the fritters look firm on the top and bubbles start to form.  Flip over to cook the other side.

Serve by themselves or jazz up with a salad for a quick and delicious dinner.  I served mine with some tomatoes and sour cream mixed with beetroot relish.  Delish!
